Laboratory
The B.B.N.P.’s laboratory continuously and strictly checks the specific qualities of Czechvar beer. B.B.N.P. even possesses its own independent research centre. Jan Šavel, MSc, PhD, who stands in charge of the centre, was in year 2004 ‘inaugurated’ in the “Hall of Glory” of the Czech brewing industry. He is also the author and co-author of around thirty patents. The research centre applies itself to the research of brewing and quality control.
The B.B.N.P.’s laboratory also grows a unique culture of yeast plants. The excellently smooth taste and pleasant smell of Czechvar beer are, to a large extent the result of the extraordinary qualities of this yeast culture. The high stability of the metabolic activity is characteristic of B.B.N.P.’s brewing yeast plants. As opposed to different yeast strains, the B.B.N.P. ones adequately ferment the beer in such a way that they ensure a comparatively low content of carbohydrates and a high content of antioxidants.
Individual yeast plants “mature” like people, they go through “the youth”, subsequently “getting older” and “die”. To keep up with the stable quality, taste and smell of the beer, the brewing yeast culture must be always kept in an optimum state so that it is getting younger all the time. Which is the main task of this laboratory.
